The Arcadian Series project saw organic barley farmers John Mallick, Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley and Trevor Harris come together to contribute towards what is thought to be Ireland’s first organic-certified whiskey. It is named after the Ancient Greek Goddess Gaia, who represents the personification of the Earth. A vatted malt of 42% First-fill American Oak, 17% Virgin American Oak, 23% Premium French Oak, 18% Vin Doux Naturel Oak.
