The Echlinville Distillery is rejuvenating the renowned Old Comber whiskey brand, dormant for nearly 70 years. Founded in 1825, Old Comber was known for producing one of Ireland’s finest pot stills until it’s closure in the early 1950’s. Its legacy, while interrupted, has now found a new lease on life with Echlinville’s revival efforts. Today’s blend, a mix of pot still and grain whiskey, was distilled just ten miles from Echlinville’s current location. Interestingly, Echlinville has decided to forgo the tradition ex-bourbon cask treatment, instead opting to mature the spirit entirely in select port and sherry casks resulting in a rich, spicy profile.
