Appearance:
Burnished gold with glints of topaz.
Nose:
Lively and creamy. On the first nose, beautiful notes of yellow fruits (apple, pear, Mirabelle plum) appear alongside very nobly expressed spices (saffron, star anise, clove). Allowed to breathe, the nose opens up into a fresh herbaceous (lawn, lucerne) and lemony register. Gradually, red fruits (raspberry, strawberry, red currant) and tiger balm further accentuate the profoundly Irish character of the aromatic palette.
Palate:
Full of energy and freshness. Continuing on perfectly from the nose, the attack reveals a rare fruity purity (white currant, blackcurrant). At the same time superbly malty, it allows glimpses of truly delicious toffee and biscuit flavours. On the mid-palate, exotic fruits (passion fruit, pineapple), cocoa bean, beeswax and white florals (lily of the valley, lilac) create a highly distinguished flavour ensemble. The end of the palate is vanilla and roasted (coffee).
Finish:
Long, taut. For its part characterized by notes of red fruits (raspberry, wild strawberry), the start of the finish has a very fine texture. It gradually becomes increasingly powdery (rice cake, curry, grated ginger) and liquorice. Mineral, it lingers with notes of slate and pencil lead. On the retro-nasal olfaction, bourbon vanilla and bitter orange are intimately linked. The empty glass is herbaceous (lichen, moss), malty and floral (hawthorn).
