Embracing tradition and innovation, this Single Farm Origin edition boasts barley exclusively from Lacken Farm, paired with authentic Irish peat from County Kildare. With its intense peatiness (57 ppm), the malt offers a distinct palate – a blend of salty, oily, full-bodied character enhanced by undertones of white fruit, green tea, and hay. Lacken was previously released unpeated, exclusively to the French market, making this an necessary addition to the Waterford collection for anyone interested in a true comparitive tasting experience. Interestingly, it has been noted the barley flavour elements still shine through despite the heavy treatment of peat, further showcasing the importantance of terroir in whiskey making.

Tasting Notes:
Nose:
Bold yet refined. Prominent peat and fresh morning smoke intertwine with coastal hints of iodine and oyster. As it fully opens, sweeter touches of barley sugar, apple, pear, and warm hay emerge.
Palate:
Rich and velvety. Dominant flavors of grist, driftwood, and campfire are complemented by hints of wool and Lapsang Souchong tea. The palate is balanced with juicy white peach and smooth applesauce.
Finish:
Distinctly smoky with complex notes of cigar tobacco, green tea, and a touch of tar.
