Finally the entire collection from Two Stacks has been released. The art of the blend is on full show. Firstly, you have their original “Blender’s cut” ratio of five distinct whiskey styles, which includes pot still and peated whiskey. This intricate blend was married together and matured in Virgin Oak, ex-Bourbon and then ex-oloroso sherry hogsheads. Taking it one step further, they split the result into four separate cask finished beauties, covering a wide spectrum of profiles. Take that next step yourself. We are delighted to announce the release of the 2 remaining expressions in our Straight from The Cask series. The 3rd edition, a beautiful and delicate Sauternes cask finish accompanied be the 4th and final whiskey cask to be disgorged, A French oak barrel once playing host to a 5-year-old rum in Barbados. The Blenders Cut spent 90 days soaking up all the flavors the Caribbean had to offer. Both expressions have an abundance of flavour, and yet completely different to one another. The addition of water to the Whiskey will bring some of those peat notes back to life too. Truly mouthwatering.

The Blenders Cut –
Sauternes Cask Strength

Is a premium cask strength whiskey that boasts an ABV at 63.5%. It takes our original complex blend of single pot still, double and peated malt, light and dark grain whiskey, aging for 45 days in Sauternes casks. The whiskey is non-chill-filtered with no added colouring before being hand-bottled.

Nose: Delicate floral notes of fresh grass, subtle honeycomb and sweet vanilla.

Palate:A warm coating of honeysuckle, playing host to sweet grape, peach skin and citrus marmalade.

Pairing: Blue Cheese, follow the terroir and go French. A crumbly Roquefortwill do nicely. Slightly savory, somewhat grassy, pairs perfectly with the sweet sauternes.

Rum Cask Strength

Is a premium cask strength whiskey that boasts an ABV at 63.5%. It takes our original complex blend of single pot still, double and peated malt, light and dark grain whiskey aged for 90 days in plantation rum casks, The whiskey is non-chill-filtered with no added colouring before being hand-bottled.

Nose: The rum influence dominates the senses, with flickers of sweet pineapple, molasses and golden syrup.

Palate:n explosion of pineapple, coconut and fired banana smothered in golden syrup.

Pairing: Banana topped Sticky Toffee Pudding for Dessert. Drizzle a little whiskey and watch the sponge soak it in, serve warm. This is a no-brainer.

The whiskey is non-chill-filtered with no added colouring before being hand-bottled. One of just 222 released.

Nose: Toasted nutty aroma, dark summer fruits with a hint of campfire smoke.

Palate:A thick mouthfeel of rich plum, cherry, and strawberry finding layers of cocoa nibs and toasted hazelnut.

Pairing: Marcona almonds, the caviar of Spain, to accompany a platter of Jamón Ibérico. The Port (and Sherry) screams for Iberian cuisine.
