This distillery is a restoration of the St. James Church with its rich history and story, and is one of the few distilleries that can mature whiskey in its own facility and bring it to the market. ..
A blend of 80% malt and 20% grain. Aged first the first 3 years in first-fill ex-bourbon barrels then transferred to ex-oloroso sherry casks for a further 4 years. This makes it one of the most sherry forward blends to hit the Irish market. Non-chill filtered and without colouring.

Description
Blender’s Notes:
Nose: Dried orange, pineapple and lemon peel to start, followed by mellow coffee, chocolate biscuit and a hint of gingerbread.
Palate: Big dried fruit and oak char palate initially which develops into raisins, juicy citrus, vanilla and red apple.
Finish: Honeyed gingerbread, sweet stewed pineapple, apricot and oak spice.
