The latest chapter of the Midleton Dair Ghaelach story. Translated to English, Dair Ghaelach means Irish Oak. This single pot still has first been matured in a combination of American oak, ex-bourbon barrels before being finished for 2 years in Virgin Irish Oak. With the youngest whiskey being 15 and the oldest 28, each cask was hand selected by Billy Leighton, Master Blender and Kevin O’Gorman, Master of Maturation. The Knockrath Forest is situated deep in the Wicklow Mountains, a stones throw from the stunning Glendalough valley. Each of the 7 trees were sustainably harvested, yielded just 42 casks. Tree 7 has quickly developed coveted status, with it’s price skyrocketing due to it’s scarcity. Reason being, the tree itself failed to produce as many barrels as the rest in the collection. When you’re dealing with 150 year old wood, mishaps can occur. Tree 7 is consider the most exotic of the bunch. Beginning with pear, meringue, nutmeg and clove. A flurry of spice engulfs the palate, leading with a zesty finish.
