The Dair Gaelach range is the first Single Pot Still ever to be finished in Virgin Irish Oak. A similar blending process to the Very Rare range is exercised, with pot still whiskeys aged between 12 and 23 years old present in the bottle minus the grain this time. Each series, this being the second, is defined by the forest from which the tree has been felled. In this case we have the Bluebell Forest from the Castle Blunden Estate in County Kilkenny. Just 6 trees were felled from this particular forest, sustainably of course, with each tree typically being designated a specific market. A real collector’s items and one that would rival the reverence of the Very Rare range. Bottles at 56.3%, non chill filtered.
