Launched in 2017, the Method & Madness range showcases the innovative work being done down in Midleton. Adjacent to the massive distillery lies a micro-distillery that the master distillers, blender and bonders have been experimenting with over the years. This provided the opportunity to push boundaries and do what’s never been done before. A smaller ship to turn so to speak when not producing 90% of the worlds Irish Whiskey. This bottle is a non-age-statement Single Pot Still, aged in ex-bourbon and oloroso sherry casks before being finished in Cherry Oak. The Cherry Wood Finish is a worlds’ first, sourced from French forests, limited in stock and deeply delicious.

Tasting Notes:
Nose:
Box hedge clippings, coconut fibre and shredded ginger, apple, lychee and mango.
Palate:
Fresh green herbs, black tea and pot still spices. More apple, coconut and white pepper after a chew.
Finish:
Long and fresh, prickly spice and toasted hazelnut. Cinnamon warmth tingling.
