Finished for up to a year in the rarest of all casks, virgin Irish oak, a milestone for Irish whiskey. Each bottle is numbered and traceable to each cask and even to the tree from whence it came. Each tree has been sustainably felled and is over 140 year-old trees from the ancient mountainous forests surrounding the distillery. This was the beginning of a year long process that ends with an Irish oak hogshead. These special casks are filled with the most quintessentially Irish of whiskeys; pot still. Reportedly a 2:1 ratio of raw to malted barley distilled at West Cork. This idea behind the bottling is to gradually replace the sourced liquid component with their own distilled pot still over a series of bottlings. The higher levels of toasted oak and vanilla flavours that Irish oak brings to the liquid complement and balance the classic pot still spices.

Tasting Notes:
Nose:
Initial hit of damp forest floor followed by sweet cereal notes, with some hint of char.
Palate:
Classic oily complexion from the raw barley. Heavy load of wood tannin from the oak takes hold. Clove permeating throughout.
Finish:
Herbal and green. More spicy than sweet.
