Each botanical is carefully weighed out and peeled fresh for every distillation. While classically juniper forward, unwaxed oranges our used as the main citrus which results in a gin truly to be savoured. Twelve botanicals are macerated in ethanol for 16-24 hours, then transferred to the pot of the 300L copper column still with additional orange slices and botanicals. Then the distillation begins. Once distilled, the pure gin spirit is then brought down to 45% ABV and left to rest for 2 weeks before hand bottling and labelling.
