One of the oldest expressions to come from Irish Indie Bottlers, and spirit specialists Celtic Whiskey Shop. Being a single malt distilled way back in 1991, this undisclosed source could only have come from Cooley or Bushmills. It is double distilled, leading us to believe it is a Cooley spirit. However, it is described as coming from a distillery normally famous for it’s triple distilled malt, hinting at the Antrim based powerhouse. Nevertheless, this a beautiful bottling. Matured in refill ex bourbon barrels for 24 before a partial transfer of the cask into ex sherry casks. Most unique to its ageing is the particular use of a resized Pedro Ximenez sherry cask. This sherry is considered the most sought after style in the world of whiskey finishing. Pedro Ximenez falls under the category of a “straw wine”, whereby the grapes are first sundried into raisins. A hydraulic press is then used to extract the syrupy, rich juice that will become fermented into the sweet delicious sherry style. These additional processes are time consuming and costly, making Pedro Ximenez and it’s barrels rarer than it’s more common Oloroso cousin.
